Apricot Cashew Bars

YIELDS 15 BARS, ~ 2.6mg THC PER BAR

INGREDIENTS:

4 cups old-fashioned oats
1/2 cup shredded unsweetened coconut
1/2 cup chopped dried apricots
1/2 cup almond slivers
1/4 cup whole wheat flour
1/2 teaspoon cinnamon
1/2 teaspoon kosher salt
1/2 cup honey
1/4 cup butter
1/4 cup coconut oil
2 teaspoons pure vanilla extract
4 Ripple Pure Packets

Instructions:

  1. Preheat oven to 325 degrees, and line a 13×9 baking pan with parchment paper.

  2. Combine oats, coconut, apricots, almonds, flour, cinnamon and salt in a large bowl.

  3. Warm the butter and coconut oil in a medium saucepan over low heat. Stir in the honey and vanilla extract.

  4. Pour the honey mixture over the oats mixture, and stir to combine thoroughly.

  5. Firmly press the mixture into the lined baking pan.

  6. Bake for 30-35 minutes, until golden brown.

  7. Cool completely, and cut into bars.
